It can also be made using more low-calorie ingredients.

CRAWFISH FETTUCINI

INGREDIENTS

3 sticks butter
3 med. chopped onions
3 ribs chopped celery
1/4 cup flour
2 chopped bell peppers
3 lbs. crawfish or shrimp
2 pints Half & Half cream
1 16 oz. pkg. Velveeta Cheese - cubed
1 16 oz. pkg. fettucini noodles
1 can Rotel Tomatoes (diced)
Salt & pepper to taste

Saute onions, bell pepper & celery in butter.  When limp, add Rotel, flour and mix well. 
Cover & cook 5 minutes on low.  Stir occasionally.  Add crawfish or shrimp, cook 20 
minutes stirring often.  Add cream, cheese, salt & pepper, mix well.  Cook on low 
20 minutes.  Cook noodles, drain, add to sauce.  Serve.
