"Pepper in Your Pocket" 
3 fresh medium garden tomatoes cut into 1/4-inch cube
2 tablespoons chopped cilantro
1 medium onion cut into 1/4-inch dice
2 or 3 seeded jalopenos or habaneros cut into 1/4-inch dice (depending
on how much heat you want and/or can handle!)
juice of 1/4 lime
salt to taste
Combine all ingredients in a bowl and let set about 30 minutes to develop. Should make 2 to 3 cups. Try it on
chips, scrambled eggs, burgers, burritos -- just about anything you'd ketchup
or salsa on. Be
